PUMPKIN BARS
Pumpkins are so closely linked with Jack'O'Lanterns and therefore to Halloween. Yet they are equally associated with Thanksgiving and pumpkin pies.
In 1621, the Plymouth colonists and Wampanoag Indians shared an autumn harvest feast known today as one of the first Thanksgiving celebrations in the colonies. It wasn’t until 1863, that President Abraham Lincoln proclaimed a national Thanksgiving Day to be held each November.
Today, along with the traditional turkey, pumpkin treats are served for Thanksgiving.

INGREDIENTS :
For the Pumpkin Bars :
• 4 eggs
• 1 ⅔ cups granulated sugar
• 1 cup vegetable oil
• 15 - ounce can pumkin
• 2 cups sifted flour
• 2 teaspoons baking powder
• 2 teaspoons ground cinnamon
• ¼ teaspoon ground cloves
• 1 teaspoon salt
• 1 teaspoon baking soda
For the cream cheese frosting :
• 8 - ounce cream cheese, softened
• ½ cup butter, softened
• 1 ½ cup sifted confectionners' sugar
• 1 teaspoon vanilla extract
DIRECTIONS :
1. Preheat the oven to 180° celcius and grease a baking pan.
2. In a large bowl, cream together eggs, sugar, oil and pumpkin.
3. In a separate bowl, mix together flour, baking powder, cinnamon, cloves, salt and baking
soda.
4. Gradually, whisk dry ingredients into wet ingredients and mix.
Do not overmix.
5. Pour the batter into the baking pan.
6. Bake for 25-30 minutes.
7. Cool the cake completely on a wire rack ( keep in the pan )
8. In a bowl combine the cream cheese and butter until smooth.
9. Add the sugar and mix until combined.
10. Stir in the vanilla and mix again.
11. Spread on cooled pumpkin bars.
12. Put a pecan nut on each slice.
