CHOCOLATE WHOOPIE PIES

 

 

Whoopie pies are considered as a New England (East Coast of the USA)  and a Pennsylvanian Amish tradition. These cake-like whoopie pies were considered a special treat because they were originally made from leftover batter. According to Amish legend, when children would find these treats in their lunch bags, they would shout "Whoopie!"

 

Ingredients :

Cakes :


  • 280 g flour (2 ⅓ cups)
  • 200g brown sugar (1 cup)
  • 50 g cocoa (½ cup)
  • 110g butter (½ cup)
  • 1teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 large egg
  • 227 g milk (1 cup)

Filling :


  • 180g butter (1 small cup)
  • 113 g confectioners' sugar (1 cup)
  • 167 g Marshmallow Fluff (1 ⅓ cups)
  • ¼ teaspoon salt dissolved in 1 tablespoon water
  • 1 ½ teaspoons vanilla extract

 

Preparation :

1 Preheat the oven to 180°C (350°F).
2 To make the cakes : In a large bowl, beat together the butter, sugar, baking powder, baking soda, salt and vanilla till smooth. 




3 Add the egg and beat till smooth.



4 Add the cocoa and combine.




5 Add the flour alternately with the milk beating till smooth.




6 Use a piping bag to make small heaps of dough (about 3cm diameter) on a baking sheet. Leave plenty of space the cales.








7 Bake the cakes for 8 to 10 minutes.



8 To make the filling, beat together the butter, sugar and marshmallow till well combined.
Dissolve the salt in the water and add to the marshmallow mixture. Add the vanilla and beat till smooth.




9 Spread the flat side of half the cakes with the filling. Top with the remaining cakes.
