HOMEMADE SALTED CARAMEL SAUCE

 

This recipe must be done with adult supervision.

Yield : 1 jar


 
Ingredients :


• 200g ( 1 cup ) granulated sugar
• 90g ( 6 Tablespoons ) salted butter
• 120ml ( ½ cup ) cream
• ¼ teaspoon salt



Method :


1. Heat sugar in a saucepan over medium heat, stirring constantly with a wooden spoon.



2. When sugar has melted into a thick brown liquid , stir the butter into the caramel for 2-3
minutes.




3. Very slowly stir in the cream.



4. Let the mixture boil for 1 minute.



5. Remove from heat and add the salt.


6. Let it cool and put it in a jar.





BAKED APPLES





Yield : 4


Ingredients :



• 1 pack of ready-made shortcrust pastry
• 1 teaspoon cornstarch ( maïzena )
• 1 tablespoon warm water
• 6 round apples
• 1 teaspoon cinnamon
• 100 g ( ½ cup ) granulated sugar
• 1 teaspoon vanilla extract
• 1 large egg
• 1 teaspoon milk
• Homemade salted caramel sauce



Method :



1. Preheat oven to 190°C ( 375° F ).


2. In a bowl, mix the cornstarch and warm water together until smooth and the cornstarch has disolved. Set aside.




3. Peel and dice 2 apples.



 

4. In a saucepan over medium heat, put the apples pieces, cornstarch / water mixture, cinnamon and sugar.




Stir constantly for 5 minutes.
Lower the heat to a simmer for 5 minutes.
Remove from heat, stir in the vanilla and allow to cool off for 20 minutes.




5. Roll out the ready-made pastry.
Cut the pastry into 1 centimenter wide strips.
Let them chill in the fridge.









6. Slice off the tops of 4 apples.
Dig out the core with a spoon .





7. Put the prepared apple filling into each apple.







8. Lay 3 or 4 strips of the pastry on top of the apple.




Weave the strips over and under the strips already in place.







9. In a small ball, whisk the egg and milk.
Brush the strips with this mixture .




10. Dust with cinnamon.





11. Place the apples in a pan.
Bake for about 30 minutes.



12. Spread with homemade salted caramel sauce.

PUMPKIN BARS







Pumpkins are so closely linked with Jack'O'Lanterns and therefore to Halloween. Yet they are equally associated with Thanksgiving and pumpkin pies.
In 1621, the Plymouth colonists and Wampanoag Indians shared an autumn harvest feast known today as one of the first Thanksgiving celebrations in the colonies. It wasn’t until 1863, that President Abraham Lincoln proclaimed a national Thanksgiving Day to be held each November.

Today, along with the traditional turkey, pumpkin treats are served for Thanksgiving.



First Thanksgiving Meal


Preparation time : 30 minutes
Cook time : 30 minutes



INGREDIENTS :



For the Pumpkin Bars :

• 4 eggs
• 1 ⅔ cups granulated sugar
• 1 cup vegetable oil
• 15 - ounce can pumkin
• 2 cups sifted flour
• 2 teaspoons baking powder
• 2 teaspoons ground cinnamon
• ¼ teaspoon ground cloves
• 1 teaspoon salt
• 1 teaspoon baking soda





For the cream cheese frosting :

• 8 - ounce cream cheese, softened
• ½ cup butter, softened
• 1 ½ cup sifted confectionners' sugar
• 1 teaspoon vanilla extract



 

 

 

DIRECTIONS :


1. Preheat the oven to 180° celcius and grease a baking pan.

2. In a large bowl, cream together eggs, sugar, oil and pumpkin.



3. In a separate bowl, mix together flour, baking powder, cinnamon, cloves, salt and baking
soda.



4. Gradually, whisk dry ingredients into wet ingredients and mix.
Do not overmix.


5. Pour the batter into the baking pan.


6. Bake for 25-30 minutes.



7. Cool the cake completely on a wire rack ( keep in the pan )




8. In a bowl combine the cream cheese and butter until smooth.



9. Add the sugar and mix until combined.



10. Stir in the vanilla and mix again.


11. Spread on cooled pumpkin bars.



12. Put a pecan nut on each slice.
