DIGESTIVE BISCUITS

 

 

The digestive was first developed in 1839 by two Scottish doctors to aid digestion. The term "digestive" is derived from the belief that they had anti-acid properties due to the use of sodium bicarbonate when they were first developed. British people love eating it with a cup of tea. Lots of brands make digestive biscuits. The Mc Vitie's digestive is the best selling biscuit in the UK, selling 80 million packs annually.

INGREDIENTS :


For about 16 biscuits :
 
• 100g wholewheat flour
• 100g medium oatmeal
• 50g brown sugar
• 1 teaspoon baking powder or ½ teaspoon of bicarbonate of soda
• Pinch of salt
• 100g butter
• 2 tablespoons milk




METHOD :


1. Pre-heat the oven to 180°C (350F) .


2. Blitz the oats to a fine powder in a blender.


3. Mix together all of the dry ingredients .




4. Rub in the butter to a breadcrumb texture.




5. Add the milk and mix to form a smooth dough.






6. Refrigerate for 15 minutes .


7. Roll out the pastry (between 2 baking sheets) to around 3mm thickness.





8. Cut out circles of about 6-7cm diameter .





9. Bake in the pre-heat oven for about 15 minutes.





10. Remove from the oven and leave to cool on a wire rack.
