PANCAKES RECIPE

Pancakes are very popular in the US and in Canada. They were brought by immigrants probably from Germany and Holland as soon as the 18th century. It was a kind of cake made in a pan with  flour, butter milk and eggs plus a raising agent. It is generally served for breakfast with fruit and maple syrup.

INGREDIENTS :

2 eggs
22 cl milk
5 tablespoons unsalted butter melted, extra for greasing
190 g plain flour
1/2 teaspoon salt
1 tablespoon caster sugar
4 teaspoons baking powder

METHOD :

1  In a bowl beat the eggs with the milk and melted butter. Put aside.

2  In another bowl sift together the flour with the salt, sugar and baking powder.

3  Pour the egg mixture into the dry ingredients and stir very lightly until the wet and dry ingredients are just combined.

4  Rub a small frying pan with a little butter, heat the pan to hot and pour  3-4 tablespoons of batter.

5  Turn the heat down to medium.

6  Cook until a few bubbles come to the surface and then turn the pancake over. Cook for about 1 minute.

7  Continue making pancakes until all the batter is used up.

Serve immediately, as pancakes are best eaten hot, with maple syrup and fruit.

Enjoy with a cup of tea ;)
